We are transparent when it comes to everything but the packaging! In fact, to stay nice and crisp, Amelì apples need to be protected.

Freeze-drying is not a synonym for air-drying. They are two different transformation processes, even though the final aim is the same: to remove water to allow the fruit to be preserved for a long time.

How does it work? Freeze-drying is the dehydration under a high vacuum of a previously frozen material, the fruit is subjected to immediate thermal blasting down to – 60°C, the temperature at which the ice sublimates, i.e., it passes from a solid state to a vapour state without changing to a liquid state.

The processing is carried out in a protected environment and without any cooking. Unlike dried fruit, freeze-dried fruit does not contain added sugars and/or flavourings.

When you taste it, it actually feels like you are eating the fresh fruit, because the freeze-dried apple retains its organoleptic and nutritional properties, flavour and taste and all its micronutrients.

Moreover, this processing method guarantees a very long product shelf life of up to twenty-four months.

We are consistent with our philosophy: we do not want to use preservatives in the processing phase, so we do not want them during the growth and development of the apples either. We only choose organic apples, which are naturally imperfect and unique.
